My name is Zhenya, I'm @troublebaba. Since 2014 I've been baking cakes for sale and running a food blog. Over these years I haven't «collected recipes from the internet» — I developed my own, understanding how every ingredient behaves: which flour gives the right structure, how cream behaves at different temperatures, why one chocolate works in ganache while another doesn't.
